Vegetable Knife from the Kanetsune KC-100 Series. The Damascus-clad blade is made of 33 layers stainless steel Damascus-patterned with a VG-10 cutting core.
Overall length: 26,2 cm, blade: 15 cm, blade width: 2,9 cm, weight: 97 g.
The hardness of the blade provides excellent edge retention, HRC 60-62. The hardness also guarantees an excellent and long lasting sharpness. The handle is made of plywood and gives an excellent grip and wears well.
The knife is made in Seki, Japan.
